An exceptional year 2023
To mark the 40th birthday of Leo Bramajo – the Chef of Estancia El Colibri R&C – we made him live an exceptional year.
In June, Leo did a one-month internship at Mirazur Restaurant, in Menton, France. Voted the best restaurant in the world twice, this establishment by Mauro Colagreco has 3 stars in the Michelin Guide.
Then, in August, he participated in the first Relais & Châteaux meeting of Latin American Chefs, which took place in Peru.
New menu at Estancia El Colibrí
The new menu of Estancia el Colibrí is inspired by the philosophy practiced by our friend Mauro Colagreco at his restaurant Mirazur, in Menton – France, where our chef Leo worked in June this year.
In order to cook in complete harmony with nature, Leo adapted this menu by using locally sourced ingredients from our organic farm, maximizing their flavours and textures.
This new menu – which enhances flowers, roots, leaves, and fruits – is designed to align with the seasonality of our land and gardens. It will be adapted and modified throughout the year, reflecting the production cycle of our organic farm.

Our Relais & Châteaux culinary offer
At Estancia El Colibri, we invite you to discover extraordinary culinary experiences, of Relais & Châteaux standard, imbued with the passing of the seasons and our love for the environment. Every meal in our Maison is a celebration of our land and its products.
We are proud of working only with local producers, who supply us with environmentally friendly products. We also have our own organic gardens and orchards, which provide us with fruits, vegetables, and aromatic herbs with authentic flavors.
Our menus vary throughout the year, depending on the seasons and product availability.
During your stay in our Maison, you may enjoy fresh, full-board meals every day – including breakfast, lunch, and dinner. All our dishes are homemade by our Chef Leo and his teams, including our doughs.
For each meal, a Maison Wellness version is proposed to you: these healthy dishes, as good for your well-being as for the environment, enhance seasonal fruits and vegetables.
As for meat lovers, they will find our exceptional cold cuts on the menu, as well as various types of meat cooked according to the authentic Argentinean tradition, such as the “cordero a la cruz” (lamb on the cross). Our asado, made up of 12 varieties of meat, was voted the best in Argentina: an unforgettable gastronomic experience.
To accompany your dishes, we also offer you a selection of the best Argentinean wines, produced in Patagonia, Mendoza, or in the Salta region. We also offer a selection of Cordoba wines, not well-known wines but very interesting in taste.
To complete this gourmet adventure, we invite you to a unique experience: a complete immersion from garden to table. With family or friends, come discover our gardens, harvest your own fruits and vegetables, and enjoy a meal prepared before your eyes by our chef Leo.
For family stays, your children will have the pleasure of discovering fruit and vegetable picking, collecting fresh eggs in our henhouse, feeding our llamas, goats, and sheep, or even milking our beloved cow Margarita.
During your stay, you may also enjoy lunches in several magical places of our Maison: in our organic gardens, under the shade of trees on sunny summer days, or by the peaceful Santa Catalina River, after a walk on horseback.
